{Fat, vinegar & salt free}

Ajvar is often used as a spread or side dish, aromatic sauce, and flavoring ingredient in Balkan dishes. It's so simple, yet delicious, that you can't stand but eat it all!







Indredients:


  • 6 red bell or bullhorn peppers

  • 2 aubergines

  • 1 garlic bulb

  • 2 tb.s. lemon juice

  • 3 tb.s. pure maple syrup

  • 1/4 to 1/5 t.s. sea salt (optional)

  • 1 fresh chilli pepper (or to taste)


Directions:


Bake peppers, aubergines and garlic at 180 C for 1 hour.


Let them cool and peel peppers and aubergines, add to a food processor. Squeeze garlic cloves and add them too.


Roughly chop fresh chilli pepper and add to a mix with lemon juice, maple syrup and salf, if using.


Pulse the food processon until you get combined, but still rough texture.


Transfer to a small saucepan and simmer for 30 minutes on small to medium heat until thickened, stir frequently.


Can be stored in the tight closed jar in the fridge for 3-5 days.
